Every now and then something comes along that I just can’t live without and coconut water is one of those things. About eight years ago, I was really interested in learning more about creating raw desserts so I signed up for some raw food classes at The Plant in Brooklyn, NY, which was a raw food production and educational facility owned by Matthew Kenney. This is where I got turned onto young Thai coconuts. I couldn’t believe that this refreshing, naturally sweet beverage came packaged in this small coconut.
Coconut water is the liquid found inside young coconuts which has a natural balance of sodium, potassium, calcium and magnesium making it a healthy electrolyte drink. It is low in fat and calories and contains no cholesterol. This natural isotonic beverage has the same level of electrolytic balance as we have in our blood and has been used intravenously to stabilize electrolytes.
The coconut itself is a natural water filter that takes almost 9 months to filter each liter of water. The water travels through many fibers being purified where it is stored away sterile in the nut itself. Coconut water now joins the pantry’s medicine cabinet. Coconuts are anti-viral, anti-fungal and anti-microbial. Coconut balances acid levels and flushes toxins out of the body.
